Solid fats used in foods and cosmetics are high in saturated or trans fats, which pose health risks. Pioneer Fellow Svitlana Mykolenko is developing an innovative alternative: using her technology, plant-based proteins can be used to turn liquid oils into stable, solid structures (so-called oleogels). The process is gentle, sustainable and highly versatile. These oleogels can replace traditional fats in foods and also serve as carriers for sensitive active ingredients, making them ideal for use in cosmetics and pharmaceuticals.
Through the Pioneer Fellowship, Svitlana Mykolenko is working to bring this healthier alternative to market.
