New professorship successfully launched
The companies Givaudan, Bühler and Nestlé made it possible to create a new professorship in the field of food process engineering and nutrition. Patrick Rühs has been appointed to this promising professorship.

To feed the growing world population, nutritious foods that can be stored and transported safely are of central importance. It is therefore crucial to develop new processes and technologies that make it possible to produce nutritious and sustainable foods.
Partnership with three Swiss companies
ETH Zurich is constantly driving forward research in this important area. It is being supported in this endeavour by three Swiss companies: Givaudan, Bühler and Nestlé. Thanks to their contribution, ETH was able to create a new professorship at the Department of Health Sciences and Technology (D-HEST). In addition, the financial support will be used to enable scientific work at the doctoral or post-doctoral level and to finance research projects in the newly created group.
After Patrick Rühs was appointed as the new assistant professor in May, his team has since started work.
New technologies developed
Patrick Rühs was Head of Science at Planted Foods AG for four years. His research focuses on the interaction between process engineering and biotechnology in order to produce new food structures. For the ETH spin-off Planted, he developed new, patented technologies and processes for the production of foodstuffs that can now be found in the retail trade.
